Nghiên cứu được thực hiện nhằm thiết lập các điều kiện phân tích và xác nhận giá trị sử dụng của phương pháp HPLC-FLD để xác định aflatoxin (B1, B2, G1, G2) trong thực phẩm. Sau đó, phương pháp được ứng dụng để phân tích các mẫu ngũ cốc, cà phê và thủy sản khô thu thập tại Hà Nội nhằm đánh giá mức độ nhiễm aflatoxin. Các mẫu dương tính được xác định lại bằng LC-MS/MS, so sánh kết quả định lượng giữa 2 phương pháp. Phương pháp được xác nhận có độ đặc hiệu cao, giới hạn phát hiện của phương pháp là 0,5 µg/kg, giới hạn định lượng của phương pháp là 1,0 µg/kg từng chất, độ lệch chuẩn tương đối tái lặp trung gian của phương pháp trong khoảng 2,55 – 18,4%, độ thu hồi của phương pháp trong khoảng 70,1 – 119%. Kết quả xác nhận cho thấy phương pháp độ tin cậy cao, đáp ứng xác định aflatoxin ở ngưỡng thấp phù hợp quy định trong QCVN 8-1:2011/BYT, đồng thời ứng dụng phương pháp phân tích mẫu cho kết quả có sự tương quan với kỹ thuật LC-MS/MS. Ứng dụng phương pháp để phân tích hàm lượng aflatoxin trong 100 mẫu thực phẩm bao gồm: ngũ cốc, cà phê và thủy sản khô. Kết quả phát hiện 5 mẫu trong tổng số 100 mẫu khảo sát chiếm tỷ lệ 5,0% có mức ô nhiễm aflatoxin tổng số từ 9,04 – 726 µg/kg.
