Các sản phẩm thịt chế biến sẵn có hương vị ngon và tiện lợi, đã trở thành lựa chọn phổ biến trong khẩu phần ăn hàng ngày của giới trẻ. Chất phụ gia thực phẩm có chứa nitrite được thêm vào sản phẩm thịt chế biến để duy trì chất lượng thực phẩm trong một khoảng thời gian. Tuy nhiên, hàm lượng của nitrite cao trong thực phẩm có gây rủi ro đối với sức khỏe con người do chúng có khả năng hình thành nitrosamine – chất gây ung thư. Vì vậy, nghiên cứu này nhằm đánh giá hàm lượng nitrite trong các loại thịt chế biến được bày bán phổ biến trên đường phố Hà Nội và được giới trẻ ưa chuộng. Kết quả cho thấy, hàm lượng nitrite nằm trong khoảng từ 1,0 đến 25,5 mg/kg, trong đó, hàm lượng nitrite trung bình được phát hiện cao nhất ở lạp xưởng, sau đó là xúc xích và nồng độ nitrite trong thịt viên, chả và dồi sụn < 3,1 mg/kg. Các giá trị này đều nằm trong giới hạn cho phép theo quy định của Bộ Y tế và quy định của Cục Quản lý Thực phẩm và Dược phẩm Hoa Kỳ (FDA). Kết quả đánh giá nguy cơ sức khỏe đối với người trưởng thành (sinh viên) cho thấy, lượng tiêu thụ nitrite hàng ngày trong sản phẩm thịt chế biến mua ở đường phố và siêu thị đều thấp hơn lượng tiêu thụ hàng ngày chấp nhận được (ADI) của nitrite là 0,07 mg/kg thể trọng/ngày.
